BLT Pitas with Homemade Herbed Mayo

I seem to be having a consistent “problem” lately of always having leftover bacon….#foodbloggerproblems, right? I mean, no big deal that an entire tray of zucchini lasagna only needs one measly slice of bacon….that just means I get to find more bacon recipes, I guess!


I haven’t always liked BLT’s, but once I started liking them I couldn’t get enough of them. Now that I have tried a BLT on pita bread instead…and with herbed mayo?? Game over.

This lovely little lunch includes the top three things you thought you couldn’t eat when you’re trying to lose weight:

  1. Cheese
  2. Bacon
  3. Carbs

Oh and as an added bonus, guess what? MAYONNAISE. Yeah, I said it. And I’m not sorry about it either. Because you can have all this indulgence for under 200 calories. Now, I wouldn’t make a habit out of these, but they’re a great lunch option that can be eaten cold straight out of your lunch box (please tell me I’m not the only one still toting around a lunch box?)

This is a delicious spin on the classic BLT that includes a flavorful homemade herbed mayo which makes all the difference! And I love using the pita bread because it’s only 55 calories! It’s a great way to get your carb fix without loading up on the 120+ calories that come with using two slices of bread.

BLT Pitas with Homemade Herbed Mayo

So we’re not making anything too innovative here. I think you can probably walk yourself through this recipe without my help, but the main reason I am sharing it is for the flavorful herbed mayo that you can add to this beauty.

To make the mayo, spoon out 1/2 C of mayonnaise of your choice. I use Hellman’s light, always. Then add in 1 Tbsp of rosemary and 1 Tbsp of basil and mix together. You can use fresh or dried, whichever you prefer.

That’s it! It’s amazing what two little seasonings can do to plain old mayo. (No offense, mayo. I love you and your questionable ingredients.) I am just so obsessed with seasoning everything right now. And everything tastes better with basil!

To assemble the pitas, spread a thin layer of the herbed mayo on the inside, using about 1 Tbsp. Then stuff it with romaine lettuce (as much as your little heart desires) and 2 slices of cooked bacon. Top with desired amount of diced tomatoes and about 1 Tbsp of shredded cheddar cheese.

Enjoy! For packing these in my lunch I kept all of the ingredients separate and assembled the pita when I was ready to eat. This prevents the mayo from making everything else soggy and weird. No one likes a weird, soggy, pita! Let’s keep lunch fresh, friends! 🙂

Description

A quick, delicious, low calorie lunch that can be eaten straight out of your lunch box! This pita has all the flavor feels but only 196 calories! (6 SP)


Ingredients

  • 1/2 of a pita bread (“1 pita” in this recipe actually means 1/2 of a whole pita!)
  • 2 slices cooked, center cut bacon
  • 1 C chopped romaine lettuce
  • 1 Tbsp diced tomato
  • 1 Tbsp shredded cheddar cheese
  • For herbed mayo: 1/2 C mayo (I used Hellman’s light), 1 Tbsp rosemary and 1 Tbsp basil (fresh or dried). Each pita uses 1 Tbsp of mix.

Instructions

  1. Prepare herbed mayo by combining 1/2 C mayonnaise (I recommend Hellman’s light), 1 Tbsp rosemary and 1 Tbsp basil. Mix to combine.
  2. Spread 1 Tbsp of Mayo into inside of pita half.
  3. Stuff with romaine lettuce and bacon.
  4. Top with diced tomato and cheddar cheese.
  5. Enjoy!
