Cauliflower Faux-tatoes with Bacon, Caramelized Onions, and Gorgonzola

Description

Loaded with gorgonzola, bacon, and caramelized onions, this dish is a low-calorie indulgence that you'll actually feel guilty eating, but at only 145 calories it's definitely guilt-free!


Ingredients

  • 1 small head cauliflower, cut into small florets
  • 2 tbsp olive oil
  • 1 white onion, cut into thin slices
  • 1 tsp minced garlic
  • 1/2 cup plain, non-fat yogurt
  • 5 strips cooked, crumbled bacon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika, divided
  • 1/2 cup crumbled gorgonzola, divided
  • 1 scallion, chopped

Instructions

  1. Bring a large pot of water to a boil and add in 1 small head of cauliflower, cut into florets. Boil until tender.
  2. Heat a medium-sized skillet over low-medium heat and add in 2 tsp olive oil and 1 white sliced onion. Sauté until translucent then add in 1 tsp minced garlic and continue to cook until onions are browned and caramelized (at least 30 minutes). (Be patient! Do not increase heat to try to caramelize faster!)
  3. Once cauliflower is tender, drain and add to a food processor with 1/2 C plain, non-fat yogurt and process until desired consistency.
  4. Transfer cauliflower to a large mixing bowl. Add in half of bacon and half of onions. Add in 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp paprika, and 1/4 cup of gorgonzola. Mix together.
  5. Once mixed, transfer into an ungreased baking dish, sprinkle remaining 1/4 cup gorgonzola and 1/4 tsp paprika on top. Broil for 2 minutes.
  6. Top with remaining sautéed onions, bacon, and 1 chopped scallion.
  7. Enjoy!

Notes

The preparation for this dish can be a little time-consuming, so if you want to make this an easy, quick weeknight meal you could cook the bacon and onions a day or two before then all you have to do is boil the cauliflower and mix everything together!

Leftovers can be stored in the refrigerator in an airtight container for up to 3 days.
