    Dark Chocolate Discs

    Yay, chocolate!! 🙂 If you remember from the recipe for chocolate chip brownies, my dad is the world's largest choco-holic. The chocolate addiction runs strong in my blood and most of the time I don't even keep it in the house because I can't. stop. eating it. Seriously. But sometimes...you just gotta have it!

    Whenever I travel I love having some type of chocolate indulgence as a snack. Last week I took a much needed relaxing, romantic trip to Niagara Falls (including the phenomenal wineries in Niagara-On-The-Lake, duh!) and I wanted to make a chocolate snack to bring with me to prevent falling into the trap of gas station Oreos and Reeses Peanut Butter Cups.

    Although these aren't particularly a healthy snack to have around on a regular basis, I think they're a pretty good alternative to what I would have eaten if I didn't have these on hand for my trip! They're only 45 calories per disc and they're a little rich so one is actually enough! And they're made with dark chocolate so they're pretty much a health food, right? 🙂


    DARK CHOCOLATE DISCS

    These cute little discs are made up of just melted chocolate topped with any ingredients you would like. I used peanuts, raisins, sprinkles, and melted peanut butter. I also used dark chocolate for these to try to make them slightly healthier but you could use any type you want! I bet they'd take on a whole new personality with white chocolate topped with some craisins. (Oooh I think I just came up with a new Christmas dessert!)Gulf Wax box for referenceWhen I make recipes with melted chocolate (such as Buckeyes...which are an Ohio staple!) I always add in a little bit of paraffin wax. This gives the chocolate more of a waxier texture which helps the chocolate hold its form better and prevents it from melting all over your fingers while you're eating it! I also think it helps with the melting process and prevents burning.Double Boiler made with two pots to cook chocolate chipsBy using a double boiler method, you are less likely to burn the chocolate as well. I have never been able to microwave chocolate or cook it over direct heat without ending up with a burnt, chunky mess. Yuck. But the double boiler method is fool-proof! If you don't own a double boiler you can just fill a large pot with boiling water and then add a smaller pot inside of it where you can add the chocolate in directly.Chocolate Chips with Wax in pot overhead shotOnce the water is boiling over medium heat, add in 10 oz of dark chocolate chips and a little chunk of wax. Continue to melt and stir continuously.Melted Chocolate in double boiler pot overhead shotIf you have one large chunk of wax you don't have to wait until it is completely melted to begin making discs. If you have any smaller pieces, make sure it is completely melted to prevent getting chunks of wax in your dessert! Also, make sure you don't accidentally get any water into the chocolate, or it will burn it! Dark Chocolate Discs with various toppings lined up in two rows on white platter close up viewBegin spooning small discs of chocolate onto a baking sheet lined with wax paper. You can make these whatever size you want, mine were a little larger than a half-dollar and 10 ounces of chocolate made about 40 discs. Top immediately with your desired toppings! I would spoon out one row at a time then add toppings before they cool.
    Dark Chocolate Disc with multicolored heart sprinkles close up viewPut the trays of discs in the refrigerator until fully set. Then indulge guilt-free in these little chocolate delights! These stayed fresh for about 5 days in a sealed, refrigerated container (or in my case in a small cooler!)

    Description

    Melted dark chocolate discs topped with your favorite salty or sweet flavors! A perfect light (yet rich) dessert or road trip snack! Only ~45 calories per disc!


    Ingredients

    Scale
    • 10 ounces dark chocolate chips
    • Small block of gulf wax (optional)
    • Toppings of choice (sprinkles, nuts, raisins, melted peanut butter, etc.)

    Instructions

    1. Using a double boiler method, heat 10 oz dark chocolate chips and a small chunk of wax until fully melted.
    2. Spoon out small discs of chocolate onto a baking sheet lined with wax paper and add toppings immediately.
    3. Refrigerate until set.
    4. Enjoy!!

    Notes

    Spoon out discs one row at a time in order to have time to add toppings before the chocolate begins to set!

    Store in sealed, refrigerated container for up to 5 days.
