Recently I discovered a new found love for salmon. Never in a million years did I picture myself cooking any recipe with raw fish. Especially not salmon. I've always been obsessed with the members of the crustacean family (I'd eat an entire ocean full of crabs if I could) but I could never get into eating straight fish.
A few weeks ago I had a catered meal that included balsamic roasted salmon and it was phe-nom-nom-nom-enal! It totally changed my view of fish and I immediately started searching for a recipe that would come close to emulating what had been served.
I'm not gonna lie, I was pretty proud of my salmon making abilities! I thought salmon was a dish better left to the professionals but this recipe is fool-proof, delicious, and makes for a perfect weeknight dinner. It only takes about 20 minutes to put together, yet it's got the appearance and taste of a restaurant-quality dish.
Moral of the story: don't be scared of cooking new foods! It's much easier than you think and pays off by introducing new, healthy dishes into your recipe repertoire!
EASY BALSAMIC ROASTED SALMON

I've always heard how salmon is one of the healthiest foods you can eat. Mostly from Andrew, who told me about 7 times while I was cooking it. 🙂 It's always been one of those foods I wish I liked because it's so healthy for you. Kind of like avocados. Which never appears on my grocery list unless I'm making this cheesy guacamole!
Anyway, I'm so happy to now be part of the salmon loving club, because it's so easy to make and [in case you haven't heard] really healthy for you! This recipe is so easy even the most amateur of cooks (*cough*...like me) can prepare this beautiful dish. It's super versatile too....it's perfect for a romantic date night or for a quick family weeknight dinner.
For this recipe, we're making 2 filets, so if you're cooking for yourself or your family, be sure to adjust the balsamic glaze ingredients appropriately! You'll begin by preheating the oven to 400 degrees and preparing a baking sheet lined with foil and sprayed generously with cooking spray. Then heat a small pot over medium heat with 2 teaspoon of olive oil. Add in 2 cloves of minced garlic and cook until it begins to brown, which takes about 2 minutes. Once the garlic has browned, add in 3 tablespoon balsamic vinegar, 2 teaspoon Dijon mustard, 2 teaspoon honey, and freshly ground black pepper, to taste. Whisk together and continue to cook until glaze becomes thick, which takes about 5 minutes.Place salmon skin-side down on a prepared baking sheet and brush with half of the glaze. Cook for 5 minutes then remove from the oven. Brush with remaining glaze and cook for an additional 5-7 minutes. You can tell the salmon is done once it flakes easily with a fork.How easy was that? Ingredients
- 2 tsp olive oil
- 2 cloves garlic, minced
- 3 Tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 2 tsp honey
- Fresh black pepper, to taste
- 2 (~5 oz) filet of Salmon
Instructions
- Preheat oven to 400 degrees and prepare a baking sheet with foil, sprayed generously with cooking spray.
- Add 2 teaspoon olive oil to a small pot over medium heat.
- Add in 2 cloves of minced garlic and cook until it begins to brown, around 2 minutes.
- Once the garlic has browned, add in 3 tablespoon balsamic vinegar, 2 teaspoon Dijon mustard, 2 teaspoon honey and black pepper to taste.
