    Gouda, Bacon, Onion, Apple Quesadillas

    Quesadillas with decadent smoked gouda, crispy crumbled bacon, sweet onion and pops of green apple! A unique and delicious lunch for 365 calories!   Gouda Bacon Onion Apple Quesadillas with title written on chalkboard

    We live by this great tavern that always has excellent, original recipes. Recently I ordered a salad that had gouda, apples, onions, bacon, radishes and white french dressing and it was so divine. The flavors meshed together perfectly!

    Since I'm not a huge salad person it made me think about how I could blend these flavors together in another way, which instantly made me think of a quesadilla! This is one of the most decadent 'dillas I've ever had and it's so unique you just have to try it for yourself for lunch this week!

    Prepare all the ingredients by chopping ¼ of a green apple into small chunks, slicing ¼ of a sweet onion, and shredding 1 oz of smoked gouda.

    In a medium-sized frying pan, cook and crumble one slice of bacon (or more if you want to prep for the week!) Wipe the pan to remove the oil after cooking. Gouda Bacon Onion Apple Quesadillas Collage of images showing how to make quesadilla in frying panTo the same frying pan, add ½ tablespoon of olive oil and sauté your onion slices until cooked through (1). Toss in your apple chunks until they soften slightly. Mix in bacon pieces then remove all ingredients and place to the side on a plate. Do not wipe the pan clean this time! 

    In the same pan you cooked the onion mixture in, add a tortilla and cook until one side is slightly browned. Flip over and top with your shredded gouda (2). Once gouda begins to melt, spread evenly with onion mixture (3). Allow to cook until gouda has fully melted then use a spatula to fold in half (4). Close up side view of Gouda Bacon Onion Apple Quesadillas Remove from pan, cut into 4 pieces with a pizza cutter and top with some extra ingredients if you wish!

    Enjoy! 🙂 This has easily become one of my new favorite lunches! It is so decadent and the flavors meld together perfectly!

    Ingredients

    • ¼ of a green apple, chopped
    • 1 slice of crumbled, cooked bacon
    • 1 soft tortilla
    • 1 oz of shredded smoked gouda
