We live by this great tavern that always has excellent, original recipes. Recently I ordered a salad that had gouda, apples, onions, bacon, radishes and white french dressing and it was so divine. The flavors meshed perfectly! Since I’m not a huge salad person it made me think about how I could blend these flavors together in another way. Then I realized ohmygosh a QUESADILLA!!
I’ve never met a quesadilla I didn’t like. I meeeeann it’s a mexican grilled cheese, how can you not love that?? This one is lightened up by using a low carb tortilla, only 1 ounce of cheese, and the main ‘meat’ of the quesadilla is a few slices of apple. At only 262 calories it makes a perfect lunch and is surprisingly very filling. I had this a few hours before I went boxing and wasn’t even hungry for dinner after my work out! (Usually I’m starvinggg)
GOUDA, BACON, ONION, APPLE QUESADILLAS

If you’ve ever made a quesadilla before, this recipe is probably pretty self-explanatory 🙂 You can use as much or as little of the ingredients as you want, or you can add in different toppings! Prepare all the ingredients by shredding the gouda, slicing the onions, cooking and crumbling a slice of bacon, and cutting off a few slices apple. I’m still elbow deep in leftover crumbled bacon from when I made cauliflower faux-tatoes, which I’m not hating because it makes whipping up these quesadillas such a breeze!
When I make a quesa-dill-ah, I heat a pan over medium heat then spray lightly with cooking spray. Add the tortilla, sprinkle with cheese, bacon and onions and allow it to cook until cheese is partially melted.
Add the apple slices to one half of the tortilla and cook for an additional minute or so, until the cheese is all ooey gooey gorgeous.
Fold the tortilla in half, allow one side to brown slightly, then flip and cook until the other side is browned to your preference. That’s an odd phrase, huh? Keep going with the quesadilla cartwheels until both sides are nice and crispy.
Enjoy! This has easily become one of my new favorite meals. Oh my gosh I can’t even put into words how good this is. I can’t even. And it’s so quick to make if you have the bacon already prepped. Next time I want to try to make into more of a burrito or crunch wrap style wrapping. It would be portable for meals on the go and I’m sure its delicious cold as well! Whip this quesadilla together in under 10 minutes for a melty, delicious, low cal lunch this week! Only 262 calories! (7 SP)
- 1 tortilla shell (I used Low carb tortillas from La Banderita)
- 1 oz of shredded smoked gouda (I used Reny Picot)
- 1 slice of crumbled, cooked bacon (I used Oscar Mayer center cut bacon)
- A few slices of green apple
- A few slices of sweet onion
- Heat a small pan over medium heat.
- Spray pan with cooking spray. Add tortilla.
- Top tortilla with gouda, cooked bacon, and onion.
- Once cheese is partially melted, add apple slices in a thin layer, on one half of tortilla.
- Allow cheese to melt completely, fold tortilla over the half with apples.
- Flip the quesadilla a few times until crispy and slightly browned. Serve immediately.
