    Ham Egg and Cheese Roll-Ups

    I eat eggs for breakfast almost every day so I'm always searching for new, unique, and healthy recipes. The most important aspect of any breakfast recipe is for it to be easy and preferably one that can be made ahead. I hate mornings more than I hate salads so I have to have something easy to whip together for breakfast. Plus, I don't drink caffeine so breakfast is my wake up call every morning so it really is my most important meal of the day!

    These ham egg and cheese roll-ups have been floating around Pinterest lately and I knew I had to try them because they seemed too good to be true! It's like a tortilla free breakfast taco and thanks to the ham it gives me enough protein to make it through to lunch. Plus...CHEESE! There is only ½ tablespoon per roll so while it's enough to make the eggs taste cheesy you won't break your calorie bank. Each roll-up is only 106 calories! I will definitely be putting these rolls on repeat for future breakfasts!


    HAM EGG AND CHEESE ROLL-UPS

    To begin these super simple roll-ups, you're going to first set your oven to broil. You then want to whisk together 10 eggs with 2 teaspoon garlic powder. Heat a large skillet over medium heat and spray with cooking spray. Add the eggs and scramble for about 3 minutes.

    Lay out one slice of ham and top with a spoonful of eggs. Sprinkle with ½ tablespoon of shredded cheddar cheese then roll up. Repeat until you have 10 roll-ups. Place into a shallow baking dish and broil for about 5 minutes or until a little crispy.

    Serve and enjoy! Leftovers can be reheated in the microwave if you're on a time crunch or in the oven for if you want them to stay crispier! 🙂

    Feel free to add in any of your favorite omelette toppings such as spinach, mushrooms, onions or peppers!

      Just curious if you have reheated in air fryer or even broiled in air fryer and if you have any suggestions for that?

        Hi Alyson! Great question. I've never tried it but I would think an air fryer would work. I would try around 350 so the eggs warm up before the ham starts to crisp. If you try it, please let me know how it works!
